DaVero Farms & Winery is one of the only wineries in Sonoma County focused exclusively on Italian grape varieties — more than 15 of them, including varieties like Sangiovese, Sagrantino, Fiano, and Pallagrello Bianco. The winery is certified both Demeter biodynamic and CCOF organic, and the estate also produces internationally renowned extra virgin olive oil. Visitors learn about regenerative farming, the importance of climate-appropriate varietals, and the value of letting Nature make the wines.  They can explore the living farm, which includes vineyards, edible gardens, olive groves, fruit trees, and farm animals, making it a true agritourism destination rather than a typical tasting room.

What Italian wine varieties does DaVero grow?

DaVero grows more than a dozen Italian grape varieties in Dry Creek Valley's Mediterranean climate, including Sangiovese, Sagrantino, Barbera, Montepulciano, Fiano, Greco, Malvasia Bianca, Moscato, Pallagrello Bianco, Falanghina, and Vermentino, and makes red, white, rosé, and sparkling wines. All wines are made with native yeasts from the grapes' regenerative vineyards.

Yes — DaVero's guided tastings are designed to introduce guests to Italian varietals in an approachable, educational way. Yes. The Pairing Experience ($55/person) includes thoughtfully curated food pairings alongside five wines and a guided farm walk. The Classic Flight ($35/person) is wine-focused. For Bottle Service ($50/table), guests are welcome to bring outside food. DaVero also offers estate olive oils, orchard jams, and farm-grown produce for purchase.

Yes — exploring the farm is a highlight of visiting DaVero. Guests can wander through biodynamic vineyards, olive groves, edible gardens, butterfly gardens, and native plantings. The Pairing Experience includes a guided farm walk. Bottle Service guests can self-guide at their leisure. The farm is also home to some delightful and very friendly pigs.

What is biodynamic wine, and how is DaVero certified?

Biodynamic farming is a holistic agricultural approach that treats the farm as a living organism and focusing on the health of the whole rather than just the crops. It goes well beyond organic farming by following natural rhythms, building soil health, and avoiding synthetic inputs entirely. DaVero holds Demeter certification — the gold standard for biodynamic agriculture — as well as CCOF organic certification. Native yeasts from DaVero's own vineyards are used for all fermentation, with no commercial yeasts or additives.
