From Tuscany to Dry Creek Valley

In 1988, driven by meticulous research and a touch of serendipity, we took cuttings from an ancient olive grove in the hills east of Lucca, Tuscany. These venerable trees, over 800 years old, have been nurtured by the same family since the 1400s! When we imported the cuttings to the US in 1990, the USDA revealed we were the first to introduce olive trees to the country since the 1800s. By 1994, we harvested our first crop, and by 1997, we celebrated our initial significant production. Today, our estate proudly boasts over 4,000 of these exceptional trees!

Our “Judgement of Paris”

Every year, Italy’s Gambero Rosso—think of it as a mix of Gourmet magazine and the Michelin Guide—selects the best Italian olive oils from the new harvest. In January 1999, they showcased their top picks at a famed New York Italian restaurant. Unbeknownst to the judges, our very own sample had just been sent to the chef of the restaurant. He slipped our ’98 DaVero Dry Creek Estate into the blind tasting, and lo and behold, the Gambero Rosso delegation chose our oil as the top Tuscan selection! Additionally, in 2001, we proudly earned the Top Gold Award at the Olive Oils of the World competition, one of the industry’s most prestigious accolades.

From Grove to Bottle: Our Process

Extra Virgin Olive Oil

At DaVero, we hand-harvest our olives over several weeks each fall, pressing them on the very day they are picked. We start with a traditional stone wheel to capture the fruit’s richness and switch to a blade mill to highlight the pepperiness as the harvest progresses. Our oil is unfiltered and produced from the first cold press. We bottle in small batches throughout the year, keeping the unbottled oil fresh under argon gas. But nothing beats the moment it’s pressed!

Nuovo Olive Oil

Our “Nuovo” olive oil is the first pressing of the season’s olives. It’s fresh, vibrant, and bursting with fruity and peppery notes. Available for a limited time after harvest!

Meyer Lemon Olive Oil

Our Meyer Lemon Oil is made by milling extra-ripe olives with our farm grown lemons. This creates a rich, juicy product with an incredible fragrance!
