In Balance with Our Climate
Our Mediterranean climate, with its hot, dry summers, mirrors that of the Italian peninsula, guiding our choice of grape varieties. Our approach supports vineyard health and ensures that our farming practices benefit a resilient ecosystem for future generations. Located at the 38th north latitude, DaVero’s climate aligns perfectly with central Italy’s. In fact, if you trace a line across the globe from DaVero, you’ll land in the heart of Italy!
In 2000, we planted our first vineyard with Sangiovese and the rare Sagrantino. Today, our estate and partner vineyards boast a diverse array of grape varieties: Barbera, Montepulciano, Nebbiolo, Pinot Nero, Sagrantino, Sangiovese, Fiano, Greco, Malvasia Bianca, Moscato, Pallagrello Bianco, Cannonau, Carignano, Primitivo, and Vermentino.
Mindful, Traditional Winemaking
We nurture our vineyards with a focus on biodiversity, allowing a diverse undergrowth to enrich the soil and protect the microbiology. Our harvest decisions are guided by taste and mouthfeel, not just chemical analysis, highlighting the artistry in winemaking.
In the winery, we rely on native yeasts from the grapes themselves for fermentation, diverging from the common practice of using commercial yeasts. Our wines rest in neutral oak barrels to let the true flavors of the grapes shine. This Old-World approach ensures our wines reflect the unique characteristics of each variety, vineyard, and vintage!
Our Vineyards
Hawk Mountain Vineyard
Our first vineyard, perched at the top of our Upper Farm on Westside Road in the Dry Creek Valley AVA, features steep, heavy clay soil and a northeastern exposure, perfect for producing small quantities of intense fruit. Named after Montefalco in Umbria, literally “hawk mountain”, the sole place in Italy where Sagrantino is found, we planted Sangiovese here in 2000 and then Sagrantino in 2005. Today, Hawk Mountain Vineyard yields our incredibly complex Sagrantino, elegant Sangiovese, and Barbera.
Valladares Vineyard
In 2008, we acquired a flat 16-acre property across Westside Road from our Upper Farm, naming it after our former farm manager Juan Valladares, who has guided our farms from the very beginning. Despite the effects of over 40 years of neglect and chemical farming, we revived the land! It now hosts vineyards, olive groves, fruit trees, vibrant vegetable gardens, and our pigs. The first wines from this vineyard emerged in 2012, showcasing depth and quality. The Valladares Vineyard is also home to our winery and hospitality.
Green Pastures Vineyard
Green Pastures Vineyard, located just a mile from our farm on Westside Road, is home to our prized Sangiovese, specifically the Brunello clone. This robust, full-bodied varietal thrives in this unique terroir, where we’ve undertaken a significant transformation by grafting Sangiovese onto Zinfandel rootstock. Though it’s a “new” vineyard for DaVero, it reflects years of dedicated progress, with many more promising vintages to come as we continue to cultivate and refine this exceptional site.”
